Fresh Pico de Gallo: Perfect for cookouts, BBQ’s, get-togethers–anything, really! A great way to utilize some of those summer crops–you could get even a little spunky and add some fresh corn and chives to it as well!
The BEST Refined Flour Free Fiber-filled Pancakes: Made into cute bunny-butt’s for Easter, this is by far my BEST pancake recipe yet made with oat flour + almond flour, no sugar/sugar sub/artificial sweeteners at all!
HEALTHIFIED Reese’s PB Eggs: Using dates, natural peanut butter, coconut flour and 85% + dark chocolate, this recipe is refined sugar free but still sweet, delicious and satisfying!
Easy & Healthy Carrot Cake Bread: Nutty, slightly sweet–perfect spring brunch addition OR Easter dessert!
Black Bean Brownies: Fudgy, silky, creamy–you’d never know these were made from black beans! Great for brownie sundaes.
Healthy Tahini Cookies: That’s right–chocolate chip cookies using TAHINI as the healthy fat base. My husband actually prefers these to regular choco-chip cookies!
Homemade Granola Bars: A slight variation from my energy bites, these are also great for pre workout snack or dessert!
Mini Egg Frittatas: Great for brunch, and they are completely individualized because you each get your own ramekin!
Garlicky Spinach Dip: One of my favorite go-to’s for party’s–it’s a crowd pleaser for sure! And it’s healthy!
Dark Chocolate Bark: Full of antioxidants in the dark chocolate and toppings! Pick your favorite super food toppings to make a great after dinner dessert.
Avocado Bruschetta: Many flavors put together–my take on the traditional bruschetta with a lemony, avocado twist! Perfect for appetizers.
Shamrock Skewers: Perfect to get the kids involved for any spring/summer activity–not just for St. Patty’s Day!
St. Patty’s Pancakes: So festive, and using–SPINACH! No food coloring in this brekky dish!
Cauliflower Crust: My all time favorite alternative to pizza crust–Cauliflower! This is my perfected recipe–I made them into mini crusts, but feel free to make one large crust.
Apple Nachos: Sweet, salty, crunchy–so many flavors! You can’t go wrong with PB + dark chocolate chips + crispy apple. Great pre or post workout snack and awesome dessert!
Banana Pops: Perfect summer treat! You can really use any toppings you want, but basically you dip bananas in chocolate and cover in your favorite toppings, then freeze! So good!
Green Smoothie Bowl: Fruits + Veggies = Happy Kat! Smoothies are even more fun to eat in a bowl with tons of toppings! It’s like healthy (and cheaper) fro-yo!
Strawberry Chia Seed Jam: A fun and healthy alternative to sugary, processed jams–using chia seeds as the thickening agent! Drizzle with some honey for some extra sweetness.
Chickpea Skillet Pizza: Another healthier alternative to pizza night, chickpea flour is higher in fiber and protein than traditional pizza crust.
